3-501.19 Provide and follow written procedures for foods held using Time as a Public Health Control (TPHC). Clearly mark foods with begin and end times. All food not sold by the end of 4 hours shall be discarded. -P/Pf: Observed TPHC procedures not being followed. Shredded lettuce and tomato cups placed on TPHC without being cooled to 41F. CDI- allowed to pull from case and placed back in freezer for rapid cooling since food had just been portioned. Cups cooled to 39 F while on site and placed on TPHC. |
