6-403.11 - Designated Areas: Observed sheet tray of personal food and drink items stored over tea and honey mustard packets in the walk-in cooler. Areas designated for employees to eat, drink, and use tobacco shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. The PIC stated the sheet tray is typically on the bottom shelf and was only moved because she felt the honey mustard needed to be stored in refrigeration. The EHS provided education about storage of shelf-stable condiments. |
