Suggestion: Use an ice bath (a large container with ice & water to submerge the milk in). Ensure the ice water is enough to cover the milk. All potentially hazardous food products shall be maintained at 45°F, or below, or 140°F or above. 15A NCAC 18A .2806 (f). |
