EHS and Director discussed facility has obtained new chemical ice packs that now state “Keep out of Reach of Children” and have additional warnings. EHS stated these need to be stored behind lock and key.
EHS observed hot box at 135F. EHS had recommended setting the temperature slightly higher to give facility more of a window for maintaining food at 135F or above. Staff stated hot box is turned on by the caterer just before food is moved to the hot box. EHS advised turning on hot box a half hour before to allow hot box to reach holding temperature before putting food in the hot box as best practices. |
