CDI - PIC voluntarily discarded.

Observed meat grinder for sausage making unwashed with meat inside from three days prior. PIC stated they store equipment in walk-in cooler without cleaning and meat still inside until customer request. PIC stated they may only use it once a week. CDI - PIC voluntarily discarded meat and moved equipment to 3 comp for washing.

CDI PIC removed olives from self surface to walk-in cooler. PIC will contact Mecklenburg County plan Review to discuss self-serve options to update permit.

Observed meat grinder with torn gasket and rusted. The middle shelf of the refrigerated case for packaged meats was operating at 42F. All other shelves were measuring <41F. The PIC was to contact their refrigeration repair technician for solutions. All meat was moved to the top and bottom shelf until repaired. 4-205.10 Ensure equipment other than toasters, mixers, microwaves, water heaters and hoods is ANSI certified or equivalent. Observed meat grinder not ansi certified.
