3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf. Observed ham, turkey, cooked shrimp and crab legs without dates. PIC was able to confirm shrimp and crab legs were opened yesterday. CDI: Dates were placed on shrimp and crab legs, ham and turkey were voluntarily discarded.
