3-302.11 Packaged and Unpackaged Food-Separation, Packaging, and Segregation - P (2) Food shall be protected from cross contamination by separating different types of raw animal product from each other such as beef, fish, lamb during storage, preparation, holding and display. Observed ground beef being stored above roast on in walk in cooler (speed rack). CDI Rearrange storage order and reviewed with PIC. REPEAT Points not escalated due to one item, all other storage was correct. However, if seen in future inspection full points will be deducted. |
