4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf Observed two knives stored on the knife rack with chunks of meat on them. PIC explaiend they had been used this morning, EHS suggested not putting them back on knife rack due to meat getting stuck in the holders. CDI-PIC took knifes to be washed/rinsed/sanitized. |
