3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P- Observed pepperoni that labeling stated to "keep refrigerated" with sell by date of 3/11. Observed mortadela with sell by date of 3/12. PIC stated the date opened shall be the date on foods. Observed some foods date marked with a "sell by" date and others with a "packed" date. Ensure proper date marking procedures are being followed. CDI, operator recorded proper date on mortadela as they stated the product was opened today. Operator voluntarily discarded 1 package of pepperoni. Return visit to be made to ensure proper date marking is followed. |
