3-501.15 Cooling Methods - Observed chicken wings that had been prepped earlier today (approximately around 9am) that were in the display case and were at 43F. CDI-chicken was placed into platter case cooler to cool. Allow food to quickly cool by placing into WIC or freezer or separate into smaller portions before placing into customer display case. |
