PIC stated that these items were just prepared and placed in unit. CDI, items transferred to walk-in cooler to rapidly cool down to temp. Observed a pan of beef cooling in walk-in cooler that was stacked and covered tightly. CDI, beef transferred into 2 pans and stored in walk-in freezer to rapidly cool. (Repeat) |
