3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P. Observed salads and yogurt bags in RIC that were above 41F. CDI-PIC moved items to WIC to rapidly cool. RIC had ambient air of 41F, but had trays on every rung of RIC, potentially limiting air circulation. PIC stated they would play a work order on RIC and will use juice RIC (34F ambient air) to hold TPHC foods prior to being set on time since unit is opened and closed less than main RIC.
