3-501.17 Date mark/label all ready-to-eat TCS foods that have been prepared and held more than 24hours in the establishment. -Pf Observed american cheese slices with no date label. CDI- Employee stated cheese was opened on monday 5/2 and was dated as such. Also observed ground beef and cooked beans with a date of 4/21 and 4/20. PIC stated products were cooked and immeadiatley frozen that date. Temps on food read well below 45F as they were thawing out. PIC stated they pulled out food yesterday. Put a date on food when pulled out of freezer to thaw. |
