3-304.14(B) Hold in-use wiping cloths in properly concentrated sanitizer between uses. Observed wet wiping cloth not in sanitizer bucket. CDI PIC put wet cloth in sanitizer bucket.
3-304.14(E) Store sanitizer containers used for wet wiping cloths off the floor and to prevent contamination of food, equipment, and utensils. Observed 2 sanitizer bucket on bottom shelf of prep tables commingled with clean dishes and single-service cups. CDI PIC moved dishes to far end of shelf and sanitizer bucket to the other end of shelf. PIC also moved 2nd sanitizer bucket from shelf with single-service cups. |
