3-304.14(B) Hold in-use wiping cloths in properly concentrated sanitizer between uses. Observation: Five wet wiping cloths were stored on countertops and steam tables. CDI - PIC prepared a quaternary sanitizing solution and placed the wiping cloths inside the red sanitizer buckets. These red buckets were positioned throughout the kitchen area. |
