Observed an open bag of mozzarella cheese date marked 11/20/18. Mozzarella cheese has a 7 day shelf life once the bag is opened if it is held at 41F or below. It has a 4 day shelf life it is held between 41F - 45F. Ensure TCS foods are discarded once the time/temperature window has expired. CDI (corrected during inspection)- Cheese voluntarily discarded. |
