4-501.19 During manual warewashing, maintain the wash solution at a minimum of 110F or as otherwise allowed by the detergent manufacturer label. -Pf Observed equipment being washed in 3 compartment sink in which wash solution measured 103F. Dish detergent label states water temperature shall be maintained at 110F or above. CDI: PIC emptied wash solution and refilled with hot water measuring 124F. |
