4-501.112 For hot water sanitizing temperatures, mechanical ware washing equipment shall provide a minimum of 180F rinse water for sanitizing. Pf Observed hot water sanitizing dish machine only reaching 144.5F on lollipop thermometer after repeated cycles. Observed wash temperature gauge not reaching proper temp. PIC has put in a work order for repair. Facility only uses single service items and will sanitize multi-use utensils in 3 compartment sink until machine is repaired. REPEAT. VR |
