Facility must maintain sanitizers at approved levels. Observed 5 bottles of sanitizer >400 ppm. These were diluted to the proper concentration. It is advised that the facility test sanitizer each time is it made due to inconsistencies in the hand pumping process. CDI. |

Utilize proper cooling methods. Observed a tray of sausage biscuits that were put on a tray of ice on the counter. The ice had melted, the biscuits were 85F and they were approaching their two hour limit. CDI- placed in the walk-in. |
