22 1.50 Proper cold holding temperatures Yes No No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed small white bags of packed lunches stored in reach in unit above 41F, see temperature chart. EHS found that unit is malfunctioning, both the outer readout and internal thermometer showing that unit is around 48-50F. Employee stated these were just prepared about an hour ago and put into unit, no storage in this unit overnight, had only been out of temp for at most 1 hour. CDI- lunches put onto rolling cart and moved into walk in cooler to chill, employees will NOT use unit for storage of TCS foods (like milk, deli sandwiches) until unit is properly holding temperature. For more information, please visit: https://health.mecknc.gov/envhealth/food-and-facilities-sanitation or view our training videos at the following weblinks: What are TCS Foods https://youtu.be/bRvqAETDjQU and Safe Food Temperatures https://youtu.be/tXP09IK-1TQ .
38 0 Insects & rodents not present; no unauthorized animals No No No 6-501.112 Remove dead or trapped birds, insects, rodents, and other pests. Observed several pest traps in dry storage area on floor with dead insects/pests. Need to be removed with fresh traps set more frequently to avoid dead pests building up in traps. EHS also suggests spraying exterior of building if pests are an issue in this facility.
47 0 Equipment, food & non-food contact surfaces approved, cleanable, properly designed, constructed & used No No No 4-501.11 Maintain equipment in good repair. Observed standing reach in unit not holding temperature, holding around 48F, have unit serviced before using for storage of TCS foods. Note: while checking high temp dish machine, EHS observed that it took over 8 cycles to get up to 160F+ internal sanitization temperature. EHS suggests having unit serviced to ensure hot water sanitization is properly functioning, suggest running multiple cycles in morning before doing dishes to get machine to temp.
