5-202.12 Provide at least 100F water at handsinks.-Pf Observed sign on one hand sink stating "No hot water, do not use." PIC showed work order to repair hot water at sink was turned in on May 21. Unable to do a 10 day return visit as facility will be closed for the summer. Repair hand sink before beginning of next school year. |

3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed salads cooling in closed plastic clam shell cases in cold hold unit at line. Cool salads in walk in cooler or freezer prior to placing in holding unit. CDI-salads put into freezer to cool rapidly. |
