3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed milk packs in reach in cooler and in walk in cooler above 41F. CDI: PIC had temperature records from this morning showing milk at 35F. Product was sold by end of inspection. It was out of temperature for less than 4 hours. Milk in walk in cooler was rapidly chilled in the walk in freezer to 41F. Milk was determined to have warmed up while bagging into drink packs. EHS reminded PIC to ensure employees are working in small batches. |
