4-501.15 Operate a warewashing machine in accordance with data plate. Observed dish machine taking abnormally long time to register on high temp test strip, and rinse guage was observed at 158, not required 180 degrees. Have dish machine serviced as needed, will follow up that dish machine sanitizing water is reaching and maintaining proper temperature. PIC will have all dishes sanitized at 3 comp sink until machine is serviced. |
