Must accurately date mark foods for date of first prep or date of when its is thawed to prevent shelf life confusion. CDI- Food properly dated.
3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed salad date marked for 8 days ago. Date mark required foods are allowed a maximum 7 day shelf life. CDI- Salad disposed of. |
