3-501.18 Discard the food requiring date labels once time/temperature window has expired - found mozzarella cheese labelled January 2015 still in refrigeration - if stored at 41F or less, discard at end of 7 days; if stored at temperature above 41F, but equal to or less than 45F, discard after 4 days. CDI by discarding mozzarella cheese. |
