General Comments

PIC stated that the heat sanitizing dishmachine is currently not working and PIC provided the work order for the repair. Facility is using single service trays and utensils. All food pans and sheet pans for the steam table and hot holding cabinet and coolers are being washed, rinsed and sanitized in the 3-compartment sink.
