3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf -Observed cut watermelon cooling in grab-and-go unit in tightly sealed plastic container. Observed Caesar salad cooling too slowly in tall RIC in tightly covered plastic container(at a rate of 0F/min). -CDI- Because both watermelon and Caesar salad were within their 4-hour cooling window, PIC moved watermelon to WIF and salad to WIC for rapid cooling. By end of inspection, both items were observed cooling at sufficient rates. Leave lids open during cooling to allow air flow to food. Reach-in-coolers and grab-and-go coolers are not efficient at cooling, they are used to maintain temperature. Use WIC or WIF for cooling. Once TCS foods are properly cooled to 41F, they can be moved to reach-in-coolers or grab-and-go coolers.
