3-304.14 Wiping Cloths, Use Limitation - Wiping cloths used for wiping counters and other equipment shall be held in a chemical sanitizer solution at a concentration for bleach at 50-100 ppm. Observed two wiping cloth buckets that were reading less than 50 ppm. CDI Wiping cloths were dumped and filled to 100 ppm. |

Observed slicer with debris on nonfood contact surface. **Slicer is no longer used. Informed PIC to either remove from facility if no longer using or make sure its store clean in case they decide to use it. |
