3-501.16(A)(2) Maintain TCS foods in cold holding at 45F or less. -P Observed a few unopened cartons of milk (not consumed by students) holding at room temperature and offered for other students/staff. CDI - PIC was unaware of this practice. Milk was placed on ice bath and rapidly cooled. PIC will monitor this practice to ensure milk is maintained at proper temperature. |
