4-501.11 Maintain equipment in good repair. Observed stand up fridge for service line 3 cold holding at 47-51 degrees, only TCS food inside was salad on TPHC not requiring cold holding. PIC said this fridge is used for TCS cheese stickes in the morning. Gasket not fitting leaving large gaps in door, may be cause of cold holding problem. Have fridge serviced ASAP. Will follow up that fridge is serviced. |
