4-501.11 Maintain equipment in good repair. Observed Victory 2 door fridge taking abnormally long to recover temp when opened. Appears to be recovering at a rate of 1 degree every 10 minutes. Have fridge serviced as needed, do not store TCS foods in fridge until properly working. Sandwiches in fridge that were just made were moved to walk in to ensure they propery chill, salads were on TPHC inside fridge, no other TCS foods were present. Walk in freezer appears to have leaking pipe with ice build up behind fan unit. Needs repair. Will follow up that fridge is repaired. |
