CDI by discarding. 3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed salsa not dated that was opened on 9/12 and shredded American cheese opened 9/15 not dated. CDI by dating the cheese and voluntarily discarding the salsa. |
