COMMENT: Observed a few diced pear cans with dents in the top of the can around the middle seal. Conversation held with the PIC (person in charge). PIC states any dented cans are pulled and are placed in a separate area to receive credit from vendor. Food packaging has be in good condition, intact and protect the food inside. CDI. The PIC had the cans pulled and placed in credit pile. |

Observed slaw (shredded cabbage mix) not properly documented with times on time board. Provide and follow written procedures for foods held using Time as a Public Health Control (TPHC). Clearly mark foods with begin and end times. All food not sold by the end of 4 hours shall be discarded. CDI. The PIC placed the slaw on the time board with the correct time of 11 AM. |
