3-501.16(A)(1) Maintain TCS foods in hot holding at 135F or above. -P Observed corn nugget hushpuppies being left out at room temperature at 85 degrees in kitchen and 115 degrees on service line. Appears this is a TCS food as it has whole kernal cooked corn inside. CDI- Hushpuppies in kitchen disposed of by PIC, hushpuppies on service line reheated for proper hot holding. Keep TCS foods properly hot held or add this item to the TPHC/TILT procedure in place. |
