4-301.12 Manual Warewashing, Sink Compartment Requirements - PF. Permit holder shall have the use of a 2 compartment sink approved and limit the warewashing to batch operations for cleaning kitchenware. Observed 2 comp sink in facility. Facility has a working dishwasher, but PIC stated sink used when dishwasher is out out of order. CDI left variance application, facility in the process of applying for a variance for 2 comp sink use. |
