3-304.14(B) Hold in-use wiping cloths in properly concentrated sanitizer between uses. - Observed in use wiping cloths held in buckets at concentration of 0 ppm during cleaning. Per conversation with PIC and employees, buckets were being used to clean only non food contact surfaces (floors, walls, equipment exteriors, tables, cart undersides, etc.). No food contact surfaces were observed being washed or sanitized at time of inspection.
Should wiping cloths be utilized, even during non food contact surface cleaning, facility is advised to retain in use wiping cloths in concentrated sanitizer, or rotate used cloths to soiled linen receptacles. |

5-501.11 An outdoor storage surface for refuse, recyclables, and returnables shall be constructed of nonabsorbent material such as concrete or asphalt and shall be smooth, durable, and sloped to drain. Observed previously noted, out of service used oil receptacle stored on absorbent soil next to cafeteria building.
5-501.111 Keep storage areas and bins for waste in good repair. Observed leftmost dumpster missing one lid, preventing full closure.
Contact waste management company or companies to remove/relocate used oil receptacle and repair/replace damaged dumpster components. |
