5 0 Procedures for responding to vomiting & diarrheal events Yes No No 2-501.11 A food establishment shall have written procedures for employees to follow when responding to vomiting or diarrheal events. -Pf For more information please visit: http://meck.co/FoodSafety - Educational poster posted in establishment, but no written procedures or kit available at time of inspection. Due to this being the establishment's first inspection since the adoption of the new food code, no point deduction. CDI - EHS educated PIC on need for kit and written procedures. EHS emailed PIC copy of written procedures. Kit will be in place by next inspection.
22 1.50 Proper cold holding temperatures Yes No No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P - Observed milk in milk cooler and fried okra and pinto beans in walk in cooler holding above 41F (see temperature chart). Per PIC, fried okra and pinto beans were leftover from yesterday and should be have been properly cooled in walk in freezer and at 41F before being placed in walk in cooler. PIC stated the issue may have come from the rack being moved from the walk in cooler during the milk delivery earlier that morning. EHS recommends placing rack in walk in freezer during deliveries to avoid this issue. PIC also stated milk had just been placed in milk cooler from walk in cooler for breakfast. CDI - PIC voluntarily discarded okra and pinto beans. PIC moved milk to walk in freezer to cool quickly. PIC placed work order for milk cooler and stated milk will be kept in walk in cooler between breakfast and lunches until it is fixed.
