4-301.12 Three compartement sink shall be provided for manual warewashing or have a variance to use a 3 compartment sink. Observed facility using a 2 compartment sink, in addition with their 3 compartment sink, to wash dishes. Facility uses one compartment for washing and rinsing and fills a tall plastic bin to submerge dishes for sanitizing. Told facility they must get approval to use proper methods to wash in a 2 comp sink. Verification required. |
