4-501.15 Operate a warewashing machine in accordance with the data plate. Observed hot water dish machine reaching a maximum rinse temperature of 153F. PIC is aware dish machine is not properly sanitizing and the machine is in the process of getting repaired. Facility is using the dish machine to wash/rinse utensils and 2 compartment sink (approved variance) to sanitize. Trays and utensils for students are single service. |
