4-501.15 Operate a warewashing machine in accordance with the data plate. Observed hot water dish machine reaching a surface temperature of 155F via EHS dish plate thermometer. PIC is aware dish machine is not properly sanitizing and is in the process of getting it repaired. Facility is using the dish machine to wash/rinse utensils and 2 compartment sink (variance acquired and present during inspection) to sanitize. Utensils for the students are single service. |
