4-501.15 Operate a warewashing machine in accordance with the data plate. Observed hot water sanitizing dish machine not reaching 180F on the rinse cycle. PIC was aware that it was not functioning and had already placed a work order to have repaired. Facility is washing and rinsing utensils in the dish machine and sanitizing in approved 2 compartment sink (variance obtained and present). Utensils for children are single service only. Continue to process utensils in this manner until dish machine is repaired. |
