3-501.19 Provide and follow written procedures for foods held using Time as a Public Health Control (TPHC). Clearly mark foods with begin and end times. All food not sold by the end of 4 hours shall be discarded. -P/Pf Observed salads being held out of temperature in the grab case cooler. It was determined that the product was being kept under time instead of temperature. The TPHC Board was found but was not filled in. CDI-The board was filled out with today's date and the times the product was set out. Ensure that the board is properly filled out when product is being held on TPHC. |
