3-501.19(B)(3) Follow written procedures for foods held using Time as a Public Health Control (TPHC) for 4 hours. Food shall be marked to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Pf EHS observed Caesar salads placed on time. EHS observed time was not documented on white board where it should be. PIC stated time is always placed on white board when items are taken from refrigeration and placed on time. CDI - PIC updated TPHC list to reflect items for the day. (1.5) |
