3-403.11 (C), (D) Reheat commercially processed, ready-to-eat food to 135F within 2 hours if food is to be hot held until service. -P Observed corn/bean mix being reheated, no temp taken and about to be put into a hot holding box below 135F. CDI-PIC heated thoroughly to 145F after 15mins. No points taken this time but a discussion was had about reheating. |
