3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. - Pf - Observed rice covered by lids while cooling in large, deep, metal containers in the walk-in cooler. Do not cover items while actively cooling. Ensure active stirring is utilized if items are cooled in deep containers. - CDI - PIC removed lids to facilitate better heat transfer during cooling. PIC incorporated active stirring after second temperature check.
