3-501.19 Time as a Public Health Control- Time approval must be followed as written in approval. Observed salads in reach-in cooler stored at 48F. Salads were held in reach-in until placed on line. Place salads in walk-in cooler after prep to get temperature down to 41F. Record time when salads leave walk-in cooler. CDI by instruction. |
