3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed a large amount of items in sandwich prep line dated 4/11 and held past 7 days such as tomatoes, tuna salad and chicken salad. Also observed these items at 45F. PIC stated these items are removed daily from walk in cooler where temperatures are measuring 41F. CDI-items discarded. Observed a few items in walk in cooler made today with incorrect date of 4/19. CDI-date changed. |
