22 1.50 Proper cold holding temperatures Yes No No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P For more information please visit: http://meck.co/FoodSafety or view our training videos at the following weblinks: What are TCS Foods https://youtu.be/bRvqAETDjQU and Safe Food Temperatures https://youtu.be/tXP09IK-1TQ. - Observed several items on speed rack in kitchen to be holding above 41F (see temperature chart). Per PIC, speed rack was removed from WIC when delivery was received at 7:30AM. EHS recommends placing speed rack in walk in freezer during delivery to prevent food temperatures rising above 41F. Also observed cut melons holding above 41F on serving line (see temperature chart). Per PIC, melons were cold held before mixing fruit together but pineapple was added to the mixture from a can sitting at room temperature. EHS recommends allowing fruit mixture to cool in walk in cooler after mixing before placing on serving line. - CDI - PIC moved all items to walk in freezer to rapidly cool. PIC voluntarily discarded black bean and corn soup.
