3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed one opened package of sliced deli turkey not dated and one container of chili with beans made on the previous day without a datemark. CDI- products were dated.
3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed chili with beans being dated 4/5. PIC indicated the product was made on 4/4 but will be served to the residents on 4/5. CDI- instructed PIC to mark the container with the day the food was prepared. |
