4-901.11(A) Air dry equipment and utensils after cleaning and sanitizing. Observed approximately five (5) dishes at dish storage area wet nesting after recent washing and sanitization. PIC elaborated that the facility utilizes separate drying racks for recently cleaned dishes and that wet nesting dishes had been placed in clean storage before drying. CDI - PIC placed wet dishes at air drying rack for proper air drying. |

4-903.11(C ) Single Service and Single Use items shall be kept in the original protective package or stored using other means that protect the item until used. Observed two (2) stacks of single service fry baskets at (one at primary lunch line, one at salad bar server line) with exposed food contact surfaces. CDI - Single service items were reoriented to prevent potential contamination. REPEAT. |
